What Does Grade AA and Grade A Mean?

Eggs are judged by the size of the air pocket at the top of the egg and the stiffness of the white of the egg. The less air, the higher the quality. This is often checked using a flashlight, and is easiest to do with a white egg. Because the shell is porous, the white can shrink over time, so commercial eggs are often sprayed with a small amount of oil to prolong shelf life.
